Char-grilled Moroccan eye fillet served on a salad of smashed avocado, baby spinach, quinoa, mint, chickpeas, lentils, cherry tomato, roasted capsicum, Spanish onion and feta. Drizzled with a sticky red wine jus.
Oven baked barramundi fillet with fresh capsicum, oregano, feta, fresh tomato, parsley and a hint of chilli in a white wine butter reduction. Served on smashed potato, broccolini and wilted spinach.
Pan fried scaloppine medallions cooked in a white wine cream sauce with prawns and avocado. Served on sweet potato mash and topped with broccolini.
