Calaspara rice with chicken, asparagus, mushroom, Spanish onion, bacon, chorizo sausage, capsicum, peas, parsley, garlic, fresh tomato and saffron in a white wine and chicken broth. Cooked and served in a paella pan.
Oven baked Hapuka filet served on a yellow split pea puree(fava) and topped with a sauteed red onion, fresh oregano, cherry tomato, white wine and fish stock reduction.
Grilled lamb cutlets served on wilted spinach and mascarpone mash potato. Topped with a cranberry, chilli, garlic, rosemary and white wine glaze.
