Char-grilled pork tenderloin wrapped in prosciutto, sliced and served on a bed of wilted spinach and mascarpone mashed potato. Topped with a date, orange, Spanish onion and coriander glaze.
Oven baked barramundi in a red onion, cherry tomato, olive, potato, garlic, white wine and zaatar sauce. Topped with crumbled feta, broccolini and served with char-grilled herb bread. Cooked and served in a paella pan.
Char-grilled pure Angus scotch fillet topped with a slow cooked mix mushroom reduction, onion, peas, red wine jus and mascarpone cream. Served with mascarpone mashed potato.
Homemade tiramisu served with cream and fresh strawberries
Lime semifreddo served with watermelon granita, almond crumble and lemon curd.
White chocolate and rose water panna cotta served with honey roasted pistachios and poached Cointreau strawberries.
