Provincial fish stew with fish pieces, mussels, prawns, calamari, capers, fresh capsicum, Spanish onion, roasted garlic, chilli, parsley and cherry tomatoes. Oven baked in a paella pan with white wine, saffron and fennel and served with char-grilled herb bread.
Arborio rice with pumpkin, chicken, onion and sage, finished with baby spinach and cream and topped with fetta and crispy sage.
Oven baked barramundi fillet cooked and served in a pan with potato, mussels, garlic, cherry tomatoes, red onion, chilli, olives and white wine.

Traditional Spanish churros tossed with cinnamon sugar and served with a white chocolate and milk chocolate dipping sauce.
