Egg fettucine with chicken, prosciutto, blanched dried apricots, spring onion, garlic, thyme and cracked pepper in a white wine cream sauce topped with toasted almond flakes.
Char-grilled and oven baked Atlantic salmon fillet served on sweet potato rounds and broccolini. Topped with a burnt butter, red onion, mint, green pea and white wine sauce.
Char-grilled scotch fillet steak served on mascarpone mashed potato. Topped with a diced capsicum, braised leek and garlic prawn red wine jus finished with a hint of mascarpone cream.
